SUGGESTION OF THE WEEK
BERRIES CAKE

Ingredients for 8 persons : 450 gr [1lb] berrries / 250 gr [1.1 lb] plain flour / 200 gr [7 oz] sugar / 4 eggs / 80 gr [3 oz] (unsalted) butter / the juice of ˝ lemon /
1 tspoon baking powder / 1 Tbspoon vanilla sugar /

- Melt the butter and let it cool down ; butter the cake tin with a little bit of it (help yourself with a brush). Eventually cover the bottom part of the tin with greaseproof paper.

- Preheat oven at 190°C / 375°F. Break the eggs and separate the whites from the yolks. In a salad bowl, add to the yolks the sugar and the vanilla sugar ; mix well. Then add the melted butter,
the lemon juice (mix), and the flour (little by little) ; finally add the baking
powder ;
mix well again (you should obtain an homogeneous mixture).

- Stiff the egg whites with a pinch salt in an electric mixer and gently incorporate them into the mixture. Add the berries and gently mix them into the dough.

- Pour the dough into the tin and bake in oven for about 35 / 40 minutes. Take out from tin (take the paper off if needed) and serve warm. You can choose to serve it with a red fruit sauce (red currant / raspberry).

Trick : you can use frozen as long as until you totally unfroze them and strain them before use.
