SUGGESTION OF THE WEEK
COTRIADE BOILED FISH

Ingredients for 4 persons : 4 monkfish (anglerfish) steaks / 2 mackerels /
2 goatfish / 800 gr [1.8 lbs] potatoes / 10 cl [3.5 fl oz] dry white wine /
40 gr butter [1.5 oz] / 2 shallots / 1 bouquet garni (parsley, thyme,
bayleaves…..) / salt and pepper.

- Cut the mackerels and goatfish in large sections. Peel and mince the shallots ;
peel the potatoes and cut them in sections.

- In a casserole, fry the shallot in the heated butter for 2/3 minutes.
Add the wine, plus 1 liter [2 pints] hot water, then add the bouquet garni,
the potatoes, salt and pepper. Cook for 15 minutes, then add the fish
and let simmer for another 10 minutes.

- Strain the fish and potatoes with a skimmer. Evenly display the fish in
individual soup dishes and pour some stock on it.

- Serve right away. This is ideal for a cold-night dinner !
