SUGGESTION OF THE WEEK
STRAWBERRIES WITH PORTO AND FRESH MINT

Ingredients for 4 persons : 900 gr [2 lbs] strawberries / 1 lemon / 70 gr
[2.5 oz] sugar / 150 gr [5 oz] mascaporne * / 15 fresh mint leaves /
10 cl [3 fl oz] porto wine.

- Rince the strawberries very quickly, strain them gently on a kitchen cloth,
hull them and cut them in halves. - Take the lemon zest and press it for juice ;
chop the fresh mint.

- Mix the strawberries with the mint, the lemon zest and juice and the sugar ;
add the porto and leave 30 minutes in the fridge. - Display evenly the
strawberries into individual bowls with their juice, add a Tbspoonful mascarpone
on each and serve.

Tricks :

Be careful not to leave the strawberries to long in the fridge. If they
stayed several hours in the fridge before you prepare them, then leave
them at room temperature for at least 15 minutes before serving them ;
just add the mascarpone at the very last minute because it has to stay
in the fridge.
Anyway, do not let them macerate too long, they would become too soft.

* Mascarpone : it is a sort of fresh cream / fresh cheese which comes
from Italy and that has become famous with the Tiramisù recipe.
If you can't find any, you can simply use heavy cream or fresh cream
instead .
* Porto wine : here again, if you can't find Porto wine, I would suggest to
replace it more simply with some rosé wine…

My simple trick :
I personally love to have strawberries and could eat them everyday.
If you are just with your family and want to have an even more simple
and quick way to have strawberries, this is my suggestion :
Mix 3 Tbspoons heavy / fresh cream with 1 Tbspoon sugar (this is just a
recommendation,
you should chose your own proportions…. ) ; then mix this with the
strawberries and serve cool !
