PENNE
PASTA WITH PROSCIUTTO AND BROCCOLIS
Ingredients for 4 persons : 350 gr [12 oz] Penne Pasta / 350
gr [12 oz]
broccolis / 1 onion / 2 Tbsppons pine nuts / 2 slices cured ham (prosciutto)

100 gr feshly grated parmesan cheese / 3 Tbspoons olive oil / salt
& pepper.
- Heat the pine in a pan (no grease) for a few minutes (they'll get
dry and
more crunchy)
- Cut the ham slices in small strips.
- Peel and mince the onion ; fry it in 2 Tbspoons olive oil
- Prepare the broccolis in very small bunches ; boil them in salted
water
for 5 minutes.
- Boil the pasta in salted water and strain them when they are still
a little firm ;
spread 1 Tbspoon of olive oil and mix.
- In the onion pan, pour the pasta and broccolis and add pepper ;
fry for
2 minutes (turn gently) then spread with the ham and pine nuts.
- Serve right away with the parmesan cheese on the table.
Trick : if you are at home and that your huests like parmesan, you
should
put it in the pasta before the pine nuts and ham and turn. I prefer
to do
that because the parmesan cheese melts better in the dish when it
is done
while preparing. To keep the parmesan cheese apart only makes sense
for guests (you are not sure they like cheese and it looks better!).
