SCALLOPS
AND AVOCADO CARPACCIO
Ingredients for 4 persons
: 2 ripe avocados / 8 kernels of scallops / 1 lemon
/ 2 Tbspoons olive oil / fresh dill / pink peppercorns (optional)
/ salt
- Cut the scallops kernels into 4 slices (thickwise) and display them
in a big plate ; spread them with a little lemon.
- Peel the avocado and cut it in round slices ; display them evenly
on
individual plates and spread them with a little lemon.
- Display the kernels on the centre of the avocado slices.
- Spread with a few drops of olive oil and then with salt (ideally
pure sea salt).
- Top with a little fresh dill and a few pink peppercorns.
Serve right away.
NB : do not prepare it in advance, the avocado would get dark.
Sauce : if you'd like to serve it with a sauce, mix a glass double
cream
with the juice of ˝ lemon and 2 Tbspoons cognac + salt ; adjust the
seasonning of the dish in accordance.
Trick : To peel an avocado more easily, roll it in your hands for
a while
before peeling it.
