TURKEY
RAGOUT WITH POTATOES
Ingredients for 6-8 persons
: 1 kg [2.2 lbs] turkey meat cut into big pieces
/ 1.5 kg [3.5 lbs potatoes] / 450 gr [1 lb] lardoons (diced bacon)
/
50 cl [1 pint] dry white wine / 2 big shallots / herbs (provence herbs,
thyme, bay leaf, etc…) salt & pepper.
- Peel and cut the potatoes in large pieces ; peel the shallots
and cut them in 4 quarters.
- In a casserole, put all the ingredients together, mix a bit, cover
and simmer or bake in oven (low temperature) for 3 to 4 hours….
NB : make sure to verify from time to time that it slowly simmers
and does not stick. If it does, add some liquid (little wine, stock,
hot water, etc….). |
