SUGGESTION OF THE WEEK
GREEN APPLES STUFFED WITH BLUE CHEESE

Ingredients for 4 persons : 4 sour green apples (Granny Smith type) /
180 gr [6 oz] blue cheese / 2 Tbspoons sour cream / ˝ lemon / 50 gr [2 oz]
shelled walnuts / a small bunch of chives / pepper.

- Cut the top "hat" of the apples and reserve them ; straighten up
the apples base so that they "stand up". Empty them with a melon baller
or a curved knife ; core and seed the apple flesh then cut it into small cubes.
Rub the inside of the apples with a quarter of lemon then spread the apple
cubes with the left lemon juice..

- Crush the blue cheese and mix it with the cream and pepper ; roughly crush
the walnuts and mix them in the cheese cream with the apple cubes.
Evenly stuff the apples with this preparation the spread with chopped chives,
and finally cover each apple with its own "hat"…

NB : serve very quickly and make sure you cover the apple flesh with lemon
for this will help it not to get dark…
