GALETTE DES
ROIS - TWELFTH NIGHT CAKE
Ingredients for 6 persons : 450 gr [1 lb] puff pastry / 125 gr [4.5
oz]
thinely ground almonds / 100 gr [3.5 oz] sugar / 2 eggs + 1 egg
yolk / 50 gr [2 oz] (unsalted) butter / 10 cl [3 fl oz] milk / 2 Tbspoons
rum / 1 Tbspoon cornstarch / 1 pinch vanilla seeds.
If you buy the puff pastry buy 2 disks ; if you want to make it by
yourself, please refer to our pastry page and prepare 2 large disks
of pastry.

Prepare the cream : beat the 2 eggs with the sugar ; add the
cornstarch mixed with the milk and incorporate it. Simmer this mixture
while whisking for a few minutes, it is going to thicken. Once thickened,
turn the flame off and incorporate the butter in small cubes, then
the
almond and vanilla powder, then the rum. Mix well.
Mix the egg yolk with 1 Tbspoon milk.
Put one disk of puff pastry on a buttered oven sheet ; evenly spread
the cream on it up to 1/2 inch of the edge ; spread the border with
a
little of the yolk+milk mixture. Put the charm now somewhere on the
cream ! Cover with the second disk of puff pastry and press the edges
to "close" it. Decorate with a knife in making designs on the pastry
(not too deep). Finish to brush the top surface with the yolk+milk
mixture.
Bake the Galette in preheated oven at 200°C/400°F for around
40-45 minutes.
The Galette must get golden brown and has to be eaten warm.
