I am looking for an authentic seafood crepes recipe and the specific region of France it derived from. Thank You. Alexandra

SEAFOOD CREPES

I have no exact Seafood Crepe recipe to give you, but just a basic principle of ideas :

- Prepare your crepe batter (for batter recipes, please use our special Crepe Theme page) :

- Prepare your favorite seafood : shrimps, prawns, mussels, squid, etc…to make it more refined, you can add some more specific seafood like scallops or bay prawns …. You can find some good mix of frozen seafood which you can simply steam or simmer in a little water for a few minutes. Do not put too much water because you will use it to prepare the sauce. The easiest way to cook fresh seafood
is the same, but less long. In any case, do not overcook them because they would become chewy….

- Prepare a béchamel which will use the cooking juice instead of milk (= white sauce). Please go check our recipe "Gratinée de Coquilles St Jacques" to help with this stage.

- Add the seafood to the white sauce (cover to keep warm) then bake the crepes and stuff them one after the other (roll them or fold them into 4). Display them in an oven dish, cover with a little grated swiss cheese put under oven grill for a few minutes. Serve right away…

This type of recipe comes from Normandy….
