Do you know the calorie content of Normandy Butter? And in addition
might you have a few good recipes to use this fine butter

HOLLANDAISE SAUCE

Normandy fine butter contains the same calories than the other butter,
i.e. 740 kcal / 100 gr / 3.5 oz.
It contains over 80% fat.

For what regards recipes, you can choose all types of recipes that
contains a high proportion of butter. I would particularly suggest a
sauce which is based on butter and highly refined : sauce hollandaise.
This is a sauce our Chefs like to serve with poached or steamed fish :

Sauce hollandaise
Ingredients : 225 gr [1/2 lb] fine butter / 3 egg yolks / the juice of 1 lemon /
salt & white pepper (preferably freshly ground).
- Cube the butter and leave it in fridge until the last moment
(it has to be very cold).
- In a salad bowl, mix the egg yolks with 1 Tbspoon water, 2 pinches
salt and 3 pinches pepper.
- Place the salad bowl in a bain-marie (the water should just simmer,
not boil) whisk the egg yolks until they get a bit creamy and thicken
a little ; begin to add butter cubes, little by little, and always wait for
1 cube to be completely melted before adding another. Whisk until all
the cubes are incorporated, then take the bowl out from the bain-marie
and keep on whisking while slowly adding the lemon juice. The sauce
should be creamy and thickened. Adjust seasonning and serve right
away.
