Long time ago I saw in a magazine the picture of this French dessert Concorde. I have looked everywhere but never find it; will you please furnish this recipe as its name sounds terrific. Merci. Ana

CONCORDE DESSERT

Concorde is a delightful dessert which is made of cocoa meringue and chocolate mousse lanes.
I can give you the meringue recipe ; the mousse au chocolat recipe is already available on the site.

Here is the recipe for Concorde Meringue :

Ingredients : 4 egg whites / 150 gr [5 oz] granulated sugar / 100 gr [3.5 oz] icing sugar / 50 gr [2 oz] bitter cocoa.

- Sift the cocao powder and the icing sugar together.

- Beat the egg whites with an electric mixer until thick and frothy. Gently add the sugar while whisking then the cocoa mixture.

- Preheat oven at 180°C / 350°F ; butter and flour the oven baking sheet.

- Put the mixture in a piping bag then form 3 circles of the same size with the socket. Bake in oven for 1 hour, don't let it get brown (cover with aluminum if necessary).

- Meanwhile prepare the mousse au chocolat.

- When the meringue is ready, take it out from oven and let it cool down ;
meanwhile keep the mousse refrigerated.

- When ready display the lanes : bottom lane of meringue / spread with chocolate mousse / cover with a meringue disk / spread with chocolate mousse/ cover with meringue disk / spread with chocolate mousse.

- Refrigerate at least 3 hours before serving ; at this moment, top with cocoa powder (put 2 or 3 teaspoons in a strainer and gently beat it above the mousse to let cocoa get down little by little...).
