CLAFOUTIS NORMAND
Apple cakes and tarts are very popular in Normandy so I suggest
a "clafoutis normand" (Apple batter-pudding).
Serves 6 - Prep'time 30 min - Cooking time 45 min
Ingredients : 500 gr [1.1 lb] apples
/ 3 eggs / 100 gr [3.5 oz] plain flour /
100 gr [3.5 oz] sugar / 50 gr [2 oz] unsalted butter / 50 gr [2
oz]
cornstarch / 20 cl [7 fl oz] double cream / 3 eggs / 1 full tspoon
baking
powder / 5 cl [1.5 fl oz] calvados (or a fruit brandy like plum
or pear) /
1 vanilla bean.
- Peel the apples and cut them into
slices ; brown them with the butter
in a non-stick pan.
Pour the calvados on them and flambe them (let the alcohol heat
for a
little while before the flame). Reserve.
- Take the vanilla seeds out from the bean with a sharp knife ;
beat the
eggs and sugar with the seeds until the mixture gets clearer.
Add the flour, the starch and the baking powder, then the cream

45 minutes at 180C / 350F.
