CLAFOUTIS NORMAND

Apple cakes and tarts are very popular in Normandy so I suggest
a "clafoutis normand" (Apple batter-pudding).

Serves 6 - Prep'time 30 min - Cooking time 45 min

Ingredients : 500 gr [1.1 lb] apples / 3 eggs / 100 gr [3.5 oz] plain flour /
100 gr [3.5 oz] sugar / 50 gr [2 oz] unsalted butter / 50 gr [2 oz]
cornstarch / 20 cl [7 fl oz] double cream / 3 eggs / 1 full tspoon baking
powder / 5 cl [1.5 fl oz] calvados (or a fruit brandy like plum or pear) /
1 vanilla bean.

- Peel the apples and cut them into slices ; brown them with the butter
in a non-stick pan.
Pour the calvados on them and flambe them (let the alcohol heat for a
little while before the flame). Reserve.

- Take the vanilla seeds out from the bean with a sharp knife ; beat the
eggs and sugar with the seeds until the mixture gets clearer.
Add the flour, the starch and the baking powder, then the cream and
finally the apples with ther cooking juice. Mix well.

- Pour the batter in a buttered tin and bake in preheated oven for
45 minutes at 180C / 350F.

Serve warm from oven.
