I'm looking for a cake recipe from Alsace.

KOUGLOF

Kouglof or Kugelhopf is the traditional Alsatian cake. Here is the recipe
(it serves 8 persons) :

Ingredients : 1 kg [2.2 lbs] plain flour / 2 eggs / 70 cl [24 fl oz] milk /
350 gr [12 oz] unsalted butter / 150 gr [5 oz] sugar / 40 gr
[1.5 oz] baker's yeast / 10 gr [1/3 oz] salt / 125 gr [4.5 oz] raisins.

- Mix 125 gr [4.5 oz] plain flour with the yeast and the warm milk
to form a dough ; leave it to rise.

- Add the left flour, the eggs, the salt and the soft butter and beat
vigourously until you obtain an homogeneous mixture ; add the sugar
and beat ; add the raisins.

- Butter a kugelhopf tin and pour the mixture in (half high, not more) ;
leave it to rise again for 1 hour.

- Bake in preheated oven at 200°C/400°F for 45 minutes to 1 hour.

- Take it off from tin, let the cake cool down, than spread with icing
sugar.
