VEGETABLE
COLD SOUP VICHYSSOISE
A Vichyssoise is a vegetable cold soup.
Ingredients : 500 gr [1 lb] leek whites / 500 gr [1 lb] potatoes
/
50 gr [2 oz] butter / 25 cl [8 fl oz] sour cream / 1 Tbspoon fresh
and chopped chervil / grated nutmeg / salt.
- Wash/peal and prepare the vegetables. Cut the leeks very thinly
and the potatoes into small pieces.
- Melt the butter in a saucepan and braise the leeks in for 15 minutes
;
they must not get brown.
Cover with 1.5 liter [2 pints] cold water. Add salt. Add the potatoes.
Simmer for 30 minutes.
- Blend in the mixer and season with the nutmeg ; adjust salt.
Add the cream and mix well.
Let it cool down completely and put in fridge.
- Serve very cold, spread with the chervil.
